An essence is one thing, taken as far as it will go. Nothing beside it to soften it, nothing added to make it easier to like. What is left has to hold on its own. We work back to the root of the thing and leave it at full strength.

A composition is written before it is baked: a fixed set of components in a fixed order, balanced so that no single one arrives first. The interest is architectural — how the layers meet, how a form holds, the rhythm a shape sets across the plate.

A dialog is two things put in the same piece and left to disagree — roasted depth against acidity, bitter against bright, shadow against light. Ingredients or ideas; the rule is the same. We do not round the edges between them or find a third thing to mediate.

Santific pieces are formulated to a target: less sugar, less refined carbohydrate, structure and flavour held. The point is not a pastry with nothing in it. Every ingredient is there for a reason — to build texture, to carry flavour, to hold a form — and a piece does not need to be excessive to be worth eating. The figures are per serving, and they come from the formulation.
