A dialog is two things put in the same piece and left to disagree — roasted depth against acidity, bitter against bright, shadow against light. Ingredients or ideas; the rule is the same. We do not round the edges between them or find a third thing to mediate.

Sharp, bright, and gone almost at once.
72% chocolate against whole-confit blood orange. Neither one softened.

Lapsang souchong
Tarry, dry, faintly medicinal.

Chestnut honey
Dark, bitter-sweet, and heavy.
Smoked tea and chestnut honey, held a very short distance apart.
