Essence of Black Forest
Layers of dark sponge with the cherries between them, and the cream ridged across the top in a single spiral. The sides are panelled in tempered chocolate rather than pressed with shavings — the one liberty, and it is a matter of finish, not of recipe. Cut cold, straight from the fridge.

What makes it true
Sour morellos, cream whipped with nothing in it to hold it up, and enough Kirschwasser in the sponge that you meet the spirit before the fruit. German law will not let a Schwarzwälder Kirschtorte be sold as one without the kirsch, and that is the right law — take it out and this is a chocolate cake with cream on it.
